Proteolytic enzymes are well known for catalyzing hydrolytic reactions. These fall under the group of large and complex, also as proteases. mainly derived from microbial origin favored because they have a short generation time, ease genetic manipulation microorganisms, availability diverse species in nature. Macro fungi significant played an excellent role degrading lignocellulosic compounds, such mushrooms. They efficiently degrade cellulose produce extracellular xylanases, cellulases, ligninolytic enzymes. Furthermore, proteases play physiology, metalloproteinase, subtilases, aspartate, etc. Many worldwide researchers reported mycelial secretion basidiomycetes. Thus, many protease extraction methods been developed various categories mushroom species, i.e., Pleurotusostreatus, Phanerochaetechrysosporium, Schizophyllum commune, Chondrostereumpurpureum, Hypsizygusmarmoreus, there is high demand industry specific proteolytic enzymatic activity. Numerous mushrooms not explored to date optimization production Therefore, further detailed studies required expose mechanisms application proficient The present chapter will deliberately deal with downstream processing their industrial applications.
